Ardmore 22y/o Equilibrium III Whisky Sponge 53%ABV 15ml / 30ml

With the Equilibrium Series Angus from Decadent Drinks / Whisky Sponge / Whiskyland takes casks that may be unbalanced in some way - too much peat, too much sherry etc and trys to create equilibrium by marrying the casks to create a better whisky. The first two editions were from Edradour mixing Ballechin (peated Edradour) and Edradour casks. This edition uses whisky from two peated casks from Ardmore - 30% from a 25 year old refill bourbon and 70% a 22 year old finished in a sherry cask. The peat is not very strong and its heavily sherried - clearly the sherry finish must have totally dominated the distillate in the 22 year old and probably wasn't worthy of a Whisky Sponge bottling. Clearly by adding more whisky from an old refill cask it adds complexity and lets the distillate shine through again - in effect creating more equilibrium in what was before probably an unbalanced. Great job - this is super enjoyable and a bit too easy to drink.
