Plume means feather in French and in previous centuries when people wrote with feathers it meant a pen. Plume whiskies are all sherry cask whiskies from Signatory's warehouses hand-selected for La Maison de Whisky in Paris. If something is a masterpiece people want to put their signature on it. The Plume range was conceived to showcase the best young sherry cask whiskies in existence. This range is very expensive for the age of the whisky and when the first bottles came out there was a lot of criticism, but now these whiskies are developing a cult following. Here is a 10 year old Mortlach finished in a first fill sherry butt, bottled at cask strength with natural colour. Here we have the Mortlach distillate - the beast of Dufftown which is a heavy meaty distillate vs a super active sherry cask. The ultimate sherry bomb -Rich and balanced. Pear, raisins, sticky date pudding, Christmas cake, burnt caramel, hints of nutmeg and ginger.

Some lovely ocean spray and subtle smoke on the nose. More of the ocean than the fire on the nose at least. Sweet upfront and then a little prickly, but beautifully done. Apricot jam which reveals freshly cracked black pepper, that smoothens into cured meats and honey. This dram gives a charcuterie board alongside a cigar. A taster is well worthwhile as this has certainly moved me towards buying a bottle.
I've actually been wanting to taste this so I can make up my mind to buy a bottle. When I found your site and saw it had this I immediately bought some tasting samples and absolutely loved it! Will definitely invest in a bottle
