Orkney (Highland Park) 20y/o Single Malts of Scotland 56.9%ABV 30ml

This secret (not really) single malt comes from a distillery situated on the Isle of Orkney. There are two distilleries on the Isle of Orkney and Scapa was mothballed from 1994 to 2004 so this can only be the other one. Matured for 20 years in a single hogshead.

Tasting notes stolen from Whisky Galore NZ: Fresh sea spray opens the nose, fragrant heather, hay, toasted fruit bread and chilli-infused honey. The palate has soda bread, burnt bread rolls, crumpets covered in honey, Dundee cookies, chilli dipping oil, white tea and treacle tart. Chewy lemon honey lozenges on the finish. A complex venture.
