This is an Irish single malt whisky aged in Bourbon barrels from an undisclosed distillery. Pearse Lyons has been distilling in Ireland for over 6 years and owns bourbon distilleries in the US and has access to great casks so it won't be long until they have their own single malt whiskey. Currently some of their blends contain some Pearse distilled whisky but no single malts. This is a preview of the kind of single malt whiskey they are likely to produce. The bourbon barrels used to age the whisky come from Pearse's distilleries in Lexington Kentucky.

Background
Pearse Lyons was an Irish chemist and brewer that worked at Harp and Guinness and with Barry Crocket at Midleton and helped design the new Midleton Distillery in Cork. He was the first Irishman to get a masters degree in brewing and distilling. He moved to Kentucky and became an important person with his brewing and distilling technology company Alltech which employs 6000 people and he later opened the Lexington Brewery and Distillery and 2 other distilleries in the US. His dream was to open a distillery in his mother country so he returned to Dublin. He died a year after the new distillery in the Liberties was finally completed. The whisky now bears his name.
The Liberties was large area of land just outside the heart of Dublin that was given to St Thomas Abbey and given tax exemption in the 12th century. The tax free status was called 'The Liberties' as the Abbey and businesses the Abbey started leasing land to started producing large amounts of liquor and beer. At one stage there were 37 distilleries and several breweries - Half the area was dominated by the storerooms of Guinness brewery. Today the distilleries are returning. Pearse Lyons Distillery is in the Liberties within a massive old church. Opened in 2017 and with the lovely Liberties Distillery in a converted old building and the Guinness Brewery experience centre nearby its becoming a boozy tourist destination.
