Tobermory 30y/o 1994 Chateau d'Yquem Sauternes Cask#24024 Alambic Classique 62.9%abv 15ml / 30ml

Chateau d'Yquem is the most famous and revered producer of Sauternes wine and uses the thickest staves of French oak with the finest grain to reuse the casks for 100 years. Since it was bought by LVMH whisky distilleries have not been able to get hold of casks or at least been unable to name the vineyard. This is a 30y/o Tobermory that is an incredible 62.9%abv from the German bottler Alambic Classique.

This whisky is sweet, funky and feisty on first sip - it has an intense nose of almonds, white wine, bonfire night sparklers and salted caramel and a hot spicy long finish of white pepper and cloves that attacks the back of your throat. Leave for 10 minutes and it changes to be more coastal with orange citrus notes, add a drop of water and it opens up further and changes again with malty milo and rosemary notes. A super volatile complex whisky that entertains as it changes in the glass dramatically every 5 minutes.
